Las Flores has been in the Vergara family for over 30 years, with Jhoan and his brother Diego now leading the farm into a new era of specialty coffee. Their work balances tradition and experimentation, particularly with fermentation and advanced decaffeination methods.
The Lot
The farm’s environment, shaded by native and fruit trees, supports slow cherry maturation and complex flavour development. In the cup, this translates into a decaf that feels anything but ordinary: world-class, spicy, fresh and surprising, with notes of green peppercorn, ginger and kaffir lime.
