Cascara is the dried fruit of the coffee cherry, brewed like tea for a sweet, gently caffeinated drink. Ours comes from Gesha cherries at Finca La Piragua in Huila, with notes of stewed apple, quince, and red oolong.

Alexander Vargas is a well-known name in the municipality of Palestina. From a very young age, Alexander has been immersed in the world of coffee. At the age of 15, he began his coffee farming journey, following in the footsteps of his parents, who were also coffee producers. To remain competitive in an increasingly demanding coffee market, Alexander has opted to cultivate exotic and high-quality varieties. This includes Pink Bourbon, Geisha, Java, and Tabi, varieties that not only stand out for their flavor but also for their ability to excel in competitions. Alexander has been a national finalist in the Cup of Excellence on four occasions, a testament to the quality of his coffee. 

Gesha Cascara

The coffee cherries used for this Gesha Cascara were grown at la Piragua farm sitting at altitudes ranging from 1600 to 1800 masl. The coffee is first fermented naturally for 24 hours to be then depulped. After that, the fruit is kept aside to be then dried in a drying shelter for 10 days until it reaches the desired moisture level.
