About this coffee
This natural-processed decaf coffee was developed by a group of producers in Azahar, Huila. The lot is composed of Castillo, Colombia and Caturra varieties that were grown at altitudes ranging from 1400 to 2000 masl.
Once the coffee cherries are harvested, naturally processed and dried, they are brought to the decaffeination plant where the coffee is first vaporized to remove any leftover chaff. It is then rehydrated in order to open its pores to easily extract the caffeine. The coffee is then put into tanks to soak in Ethyl Acetate in order to remove the caffeine from the beans. After that, the coffee is rinsed to remove any leftover Ethyl Acetate. Finally, the coffee is dried until it reaches its original moisture level to be then cooled to room temp and polished with vegetal wax to protect its appearance.
