A bright and tea-like coffee from El Rocío farm in Tulipe, Ecuador. Julio Ullauri has been growing Sidra here since 2015 and manages every step of the process himself. Expect a clean and delicate cup with notes of lime, quince and oolong.

EL ROCIO

Julio Ullauri brought a career in aeronautical engineering to coffee farming when he founded El Rocío in Tulipe.

EL ROCIO


El Rocío is a farm in Tulipe, Pichincha, run by Julio Ullauri. He came to coffee farming from a background in aeronautical engineering, and that precision shows in how he manages the farm. At 1600 masl, the farm sits in cloud forest and deals with dramatic temperature swings and high humidity, especially during drying. Julio has worked out solutions to these challenges, including moving coffee between indoor and outdoor drying depending on the conditions. The Sidra variety is washed on site. In this clean and tea-like cup, we taste lime, quince and oolong.


Our recipe

Method : V60

Water : Soft water (80ppm) at 94° C

Coffee : 15g

Water : 250g

Pours : Start with 40g. Second pour at 00:30 (110g). Third pour at 01:00 (rest). 15 sec for each pour.

Brew time : 2:40 min
